“PICANHA” (RUMP CAP)
Triangular-shaped cut from the top of the veal ́s rump. it is surrounded by a light layer
of fat which gives it its characteristic flavour and juiciness.

“LOMO BAJO” (SIRLOIN STEAK)
At the back of the loin, we find what we call “lomo bajo”. It is a leaner and juicier meat.
From the area between the ribs, we get steaks called “entrecôte”. It is a rather thick cut
with a small amount of fat.

“LOMO ALTO” (RIBEYE STEAK)
Exquisite top-quality cut with a delicious flavour, very tender and juicy. It is located in
the upper part of the “entrecôte” attached to the loin (Angus quality steer).

“PULPA DE VACÍO” (VEAL FLANK)
The veal flank is a cut that is taken from the veal ́s rear quarter, next to the ribs. It
should be noted that this meat is a little bit tougher, but it is also very flavourful.

“BIFE DE ENTRAÑA” (SKIRT STEAK)
The skirt steak is a cut corresponding to the peripheral part of the animal's diaphragm.
The meat is dark reddish in colour. In a calf of about 300 kg, this cut does not exceed
1,5 kg. It is a soft tissue (muscle) which generates movement when contracting and
extends when relaxed.

“MOLLEJAS DE TERNERA” (VEAL SWEETBREADS)
Sweetbreads are one of those parts of the animal that we usually think of as offal, but
veal sweetbreads have traditionally been considered the most succulent of all offal. It
consists of a gland, the thymus, located in the chest area. It can be considered the
caviar of veal.
