At the back of the loin, we find what we call “lomo bajo”. It is a leaner and juicier meat. From the area between the ribs, we get steaks called “entrecôte”. It is a rather thick cut with a small amount of fat.

BIFE DE ENTRAÑA 300gr

(SKIRT STEAK)

The skirt steak is a cut corresponding to the peripheral part of the animal's diaphragm. The meat is dark reddish in colour. In a calf of about 300 kg, this cut does not exceed 1,5 kg. It is a soft tissue (muscle) which generates movement when contracting.

Sweetbreads are one of those parts of the animal that we usually think of as offal, but veal sweetbreads have traditionally been considered the most succulent of all offal. It consists of a gland, the thymus, located in the chest area. It can be considered the caviar of veal.
